I’m trying something new – a weekly short reflection on Saturdays where I look back on what baking has taught me, shown me, or reminded me over the previous week. A lesson, or gift, I have received from baking.
This week: The gift of surprise
I had to start a brand-new sourdough starter a few days ago. I’ve done this before, but not with fresh flour. Usually a starter takes several days before you start seeing bubbles and activity. So, I was very surprised when the starter I had just made was overflowing out of its container only a couple days later. I had started it in a pretty small jar, thinking that would be sufficient to get it going – but I didn’t expect it to burst out the way it did, so quickly!
I think this might be because of all of the enzymes in the freshly-milled flour. Fermentation is happening – although the starter isn’t ready for me to use yet. A few more days.
Noticing something unexpected really feels like a delight. I want to take notice of these small, surprising things – they make life interesting!
