Making edible and pretty decent biscuits with fresh-milled einkorn flour, following some less-than-wonderful einkorn experiences
Previous einkorn challenges
I have had a tricky time with einkorn recently, with at least two failed loaves. Each loaf resembled a discus that you might throw at a track and field meet – flat, heavy, dense – not something you want to eat.

I did make one successful loaf with einkorn about a week ago, but it required so much sourdough starter to rise that it tasted pretty sour. Not very tasty to me.
Giving einkorn another chance
So with quite a bit of einkorn berries still sitting in my pantry (in its new cute jar), I decided to try to make something else with it: biscuits!
After searching through some online recipes for einkorn biscuits, I did not find one meant for freshly-milled whole wheat einkorn. So I chose a promising einkorn biscuits recipe that looked like it could work well enough, and gave it a chance.
In my short video here, you can see that I made a few modifications: I cut in the butter, and mixed the dough by hand. Then, I had to add extra flour to make the dough easier to work with. If you have einkorn, and want to try something besides bread to bake with it, trying these biscuits would be worth it. They came together pretty quickly!
