My maternal grandparents were both born and raised in Norway, and so Norwegian traditions and foods have been an important part of my life. I came across a recipe for Kneippbrød in Magnus Nillson’s “The Nordic Baking Book,” and knew I needed to make this. This is a very popular Norwegian bread, but I am honestly not sure if I ate it when we visited Norway when I was young. I may have overlooked it and went straight for the boller (soft, sweet, heavenly rolls.)
Anyway, I made it in this video here and it turned out great. If you don’t have a mill, you can make it with store-bought whole wheat flour and it will still be delicious. In my next post, I’ll have another story about Kneippbrød. If you like dense bread that you top with butter and cheese, perhaps, this is the one you should try.
